The provisions of this chapter shall apply to the construction
of commissaries serving mobile food preparation units.
For the purpose of this chapter, the following term shall have the meaning indicated:
COMMISSARIES SERVING MOBILE FOOD PREPARATION UNITS are food establishments in which food, containers, equipment or supplies are stored or handled for use in vehicles, mobile food preparation units, food carts or vending machines.

Ten footcandles (107.6 lux) of uniformly distributed
light as measured 30 inches (762 mm) above the
floor shall be provided in all rooms and areas in commissaries
serving mobile food preparation units.
